Overview

The "Foundations of Wine Knowledge for Hospitality Service" one-day course is designed to provide hotel F&B handlers and banquet staff with a foundational understanding of wine, enabling them to confidently interact with guests, offer informed recommendations, and enhance the overall dining experience. This course covers essential knowledge about different types of wine, wine service, proper storage, and basic wine and food pairing principles. Through a combination of interactive sessions, demonstrations, and hands-on activities, participants will gain the necessary skills to excel in their roles while handling wine-related tasks in a professional and knowledgeable manner.

Associate Professor Dr Daniel Chong Ka Leong is a seasoned hospitality professional with over 17 years of experience in higher education and professional training. He is a certified hospitality trainer and a Master-level Professional Barista, awarded by Illy Universita Trieste, Italy.

Prior to entering the education line, Dr Daniel Chong worked in the food and beverage industry as an operations manager, F&B consultant, and training manager at various multinational hotel groups, multinational franchised restaurants, and a hospitality consulting firm.

He is not only an academician who teaches about coffee but also a social online learning coffee educator for OpenLearning, one of the largest lifelong learning micro-credential platforms in the world. He has organized coffee workshops and menu consulting work.

Additionally, he is an official coach for Barista Competitions and was awarded Best Coach of the Year for 2 consecutive years (2012–2014) by Nestle Professional Malaysia.
